The method to use when you want to pre cook large amounts of vegetables to be further cooked using another method. This method is the secret to the best Brussels sprouts
- Fill your largest pot about ¾ full of water and bring to a boil
- In small batches, add the vegetables
- If you add too many at once, the temperature of the water will drop quickly.
- Let the vegetables boil until they are halfway cooked. You can pull one out and check its level of doneness.
- With a slotted spoon or strainer, remove the vegetables to a colander, if you are going to continue cooking them another way right away.
- If you are going to continue cooking them later, then use the Shocking method.
- Repeat these steps until you have cooked all of your vegetables.
Shocking
- While your vegetables are blanching, fill a large bowl with ice and an inch of water.
- When the vegetables are to cooked halfway, using a slotted spoon or strainer and remove them to the ice water bath.
- Stir them around and let them sit just until they have cooled down internally.
- Drain well and store in the refrigerator until ready to use.
