- The standard proportion for a vinaigrette is 1 part vinegar to 3 parts oil. This is just a guideline. Always start out with less oil and taste before adding more.
- Basic tools: large mixing bowl and whisk OR jar with a tight lid.
- Using the Spiced Moroccan Vinaigrette from the menu as an example:
- In your mixing bowl: add 1 clove garlic, minced, 1 Tablespoon Dijon mustard, 1 teaspoon mild curry powder, 2 teaspoons honey and ¼ champagne vinegar.
- Whisk all that together.
- Then slowly pour in the oil while you are whisking to emulsify the oil and vinegar.
- Start with ½ cup olive oil. Then taste it. Add more to your liking, up to ¾ cup.
- Oil and vinegar will always separate so you will need to whisk or shake leftovers again.
